For us, making Pinot Noir (in all its different forms) is truly a labour of love. The hot summer days and cool nights make this vineyard prime Pinot growing country. These grapes were hand-picked by a group of dedicated friends and family. We did a total of four basket presses of Pinot noir blanc making this two-ton production our largest yet.
The small nature of our bladder press can make the Pinot noir blanc a real challenge to make. Minimal skin contact is key to ensuring we achieve a golden hue and that means we have to move fast. The first batch of grapes to hit the crush pad are swiftly (but ever so gently) tossed into the press. This golden juice is then fermented in 100% stainless steel until it’s put into the bottle.
The aromas of this wine take us right back to our childhood. This wine is bursting with aromas of strawberry, rhubarb and candied berries. Similar flavours are found on the palate, with a long lingering finish.This wine pairs well with... honestly, a lot of things (like a watermelon feta salad with mint) but we think it’s perfect with a seafood benedict and a side of sun-soaked patio.
