This wine is a product of twenty-plus-year-old vines from Hugh & Mary Vineyard. The vines were picked by hand at the end of October by close family and friends. Our son was born only three weeks before so honestly, the rest is a bit of a blur
We are big lovers of Marechel Foch (even though it is not the easiest to make). Our 2014 Foch grapes were crushed and destemmed and then left to cold soak over several days. The must was fermented in small individual 3/4 ton lots until halfway to dryness, before being pressed in our half-ton basket press, and left to finish fermentation in American oak. The wine was barrel aged for twenty months before bottling.
Aromas of chocolate, vanilla and coconut coupled with a round, rich palate make this the kind of full bodied wine that will keep you coming back for more (and more, and more). Flavours of blackberry, plum, and hazelnut pair well with a great cut of meat and a whole lot of Leonard Cohen. Decant an hour before serving… if you’ve got that kind of time.
