For us, making Pinot noir (in all its different forms) is truly a labour of love. All of our Pinot is produced exclusively with grapes grown by family owned and operated Hugh & Mary Vineyard. The hot summer days and cool nights make this vineyard prime Pinot growing country. The vines range from 5 to 18 years of age and are a mix of clone 667 and 115. The grapes were hand-picked on a beautiful weekend in October pressed immediately!
These grapes were pressed in our half-ton basket press just hours after being picked and tank fermented in stainless steel.The absence of skins in the fermentation process give the Pinot noir blanc a much cooler and slower fermentation and a beautiful golden hue.
Aromas of baked apple, pear, lemon and orange zest are what will draw you in but the honey, ginger, almond on the pallet is what will keep you coming back for more. This wine pairs well with mushrooms, cream based sauces, crab and avocado. Selecting a meat? Think “white” and go for chicken, pork chops or even fish and chips.
